6-7 c. cubed/crumbles stale French bread
3/4 c raisins
1/2 c shredded coconut
3/4 c pecans
4 c whole milk
1 3/4 c sugar
3 large eggs
1/2 c (1 stick) unsalted butter
1 t cinnamon
1 t nutmeg
2 T vanilla
For Whiskey Sauce (or Bourbon or Rum):
1/2 c unsalted butter
1.5 c 10x sugar
2 large egg yolks
1/4 - 1/3 c Whiskey, Bourbon or Rum
Coat crock pot with butter spray. Place first 4 ingredients in crock.
In bowl, whisk remaining bread pudding ingredients until smooth and pour over bread cubes. Gently press down on bread to moisten completely. Cover & cook on high until puffed & toothpick comes out clean (about 2.5 hours, 190 degrees)
Remove lid and cook on high for 15 more minutes.
Turn crock pot off. Serve with Whiskey sauce. Refrigerated up to 3 days.
To make Whiskey Sauce:
Put butter & 10x sugar in pan and melt butter; Beat with an immersion blender. Beat in egg yolks & remove from heat.
Slowly beat in whiskey (or liquor of choice). Sauce will thicken as it cools. (Makes 1.5 c sauce)
(Cook's Note: The story behind bread pudding: There's an interesting story about bread pudding that I just have to share with you. Bread pudding is probably Dale's favorite dessert. His mother, Elva, makes the best and always made it for him whenever we went to her house for dinner. I don't particularly like bread pudding, but I know the difference between good and bad bread pudding, and Elva's is really, really good. When Dale and I were dating, she gave me her recipe. I, trying to show of, followed her recipe to the T, even cooking it in the water bath which she said was a must. When I asked him how it was, Dale being the polite person that he is, said that it was good, but not quite as good as his mother's. So I tasted it... and it SUCKED! Like I said, I know the difference between good and bad bread pudding! So.... I took the bread pudding and immediately dumped it upside down in the trash can! Dale almost had a heart attack! And then I told him....."Never, ever tell me you like something if you don't really like it because I will make it for you again (and again, and again!)" He just looked at me with those puppy dog eyes and just said, "Vic, it wasn't THAT bad!" Several years later, after Dale and I were married, I was talking to Elva about my bread pudding disaster. She just happened to have left out a couple of ingredients, no doubt so that her baby boy would always come back for his favorite bread pudding! I kept looking for a bread pudding that was just as good, if not better and something unique to me! This is one of them (along with Nutella Croissant Bread Pudding and Paul Deen's Krispie Kreme Bread Pudding!) Enjoy!
