For the salad, mix together:
6 c lightly packed Romaine lettuce, torn
11 oz can Mandarin oranges, drained
3 green onions, sliced
1 t fresh parsley
1/2 c slivered almonds
Sweet & Sour dressing
For the Sweet & Sour Dressing:
1/2 c veggie oil
1/4 c white wine tarragon vinegar
1.5 t sugar
1/4 t salt
1/2 teaspoon dried tarragon
1/8 t pepper
dash of liquid hot pepper sauce (I use Frank's)
In a small bowl, whisk together ingredients for Sweet & Sour Dressing. Refrigerate dressing at least 20 minutes to blend flavors. Mix well before serving.
Just before serving, toss salad ingredients with dressing.
(Cook's Note: You can use any type of lettuce, spring mix, spinach, etc. for this salad & dressing.)
