Sauerkraut Salad: Submitted by: Vickie | Date Added: 28 Apr 2015 Ingredients:

1 large can (1-lb, 13 oz) sauerkraut, rinsed & drained wel
2 c celery, diced
1 c onion, diced
1 green pepper, diced
1 large can of pimentos, chopped

For the Dressing:
1 c sugar
1/2 c cider vinegar
1 t salt

Cooking Instructions:

Cook dressing over medium heat until sugar is dissolved. Cool.

Mix veggies together. Pour dressing over veggies. Store tightly in covered container or large baggie. (This will keep for weeks!)

(Cook's Note: This is just one more of my favorite recipes from the 70's. Some things are just timeless! The original recipe called for 2 c sugar, but it's too much for my preference!)
