1 c. unsalted butter
8 oz. cream cheese
3 c. sugar
6 large eggs
3 c. flour
1 t. baking powder
1/4 t. salt
1 t. coconut extract
1 t. vanilla extract
6 oz. flaked coconut
Preheat oven to 325 degrees. Grease and flour 10 inch tube or bundt pan (I use a bundt pan).
With electric mixer, cream butter and cream cheese for about 2 minutes. Add sugar, 1/2 cup at a time, and beat until fluffy (6-8 min).
Add eggs, 1 at a time, until absorbed.
In separate bowl, add flour, baking powder & salt. Add flour mixture to creamed mixture, 1/2 cup at a time, mixing just until blended. Stir in extracts and coconut.
Spoon into prepared pan & Bake at 325 degrees for 75 minutes. Cool on wire rack, 10-15 minutes before removing from pan. Allow cake to cool completely.
