2 t garlic powder
2 t chili powder
1 t salt
1 t ground cumin
1 teaspoon paprika
1/2 t ground red pepper
8 skinless, boneless chicken thighs
Pam
6 T honey
2 t cider vinegar
Preheat broiler.
Combine 1st 6 ingredients in large baggie. Add chicken & toss to coat. Place chicken on Pam sprayed broiler pan. Broil chicken 5 minutes on each side, starting with skin side down.
Combine honey & vinegar in small bowl, stirring well. Remove chicken from oven & brush with 1/4 c of honey mixture. Broil 1 minute. Brush chicken with remaining honey and broil 1 more minute, or until chicken is done.
(Cook's note: Chicken equals 4 servings, 2 thighs each; 321 calories per serving. Serve with roasted potato wedges or brown rice and a side salad.)
