Smashed Potatoes: Submitted by: Vickie | Date Added: 19 Oct 2015 Ingredients:

small cooked potatoes, with skins on
evoo/Pam
salt, pepper, thyme and Old Bay for seasoning

Cooking Instructions:

Use any small potatoes that have been baked or boiled. Lay potato on a piece of foil or waxed potato & smash it to flatten it somewhat. Spray potatoes with Pam. Season with your choice of seasonings such as salt, pepper, thyme, sage and/or Old Bay. Easy on the salt if you're using Old Bay.

Bake on a Pam sprayed cookie sheet for 25-30 minutes at 450 degree, or pan fry in evoo.

(Cook's note: I prefer pan fried because they come out crispier!
Use as a side at breakfast or dinner. Whenever I'm boiling or baking potatoes, I cook extra potatoes to make these smashed potatoes!)
