3 cups sweet potatoes, drained (2 - 40 oz cans, drained, are ok)
1/2 c sugar
1/2 t salt
1/3 c butter or margarine
1/2 c Eagle condensed milk
2 eggs
1 tsp vanilla
Topping ingredients:
1 c light brown sugar, packed
1 c chopped nuts (I use pecans)
1/3 c melted butter or margarine
1/3 c flour
1 c coconut (optional, but I use it!)
With a mixer, beat the 1st 7 ingredients and pour into a Pam sprayed casserole dish.
Mix topping ingredients until crumbly and all to the top of the sweet potatoes.
Bake at 350 degrees for 30-45 minutes.
