1/2 c pumpkin puree
1/2 c egg whites (from eggs or carton)
sweetener
cinnamon or pumpkin pie spice
Mix all ingredients. It you prefer a flan-like texture, add more pumpkin; If you prefer cake-like, add more egg whites. Microwave for 2 minute. Ice using Kool Whip or mix Greek yogurt, hazelnut or pumpkin pie cream cheese and pumpkin pie spice for topping. Sprinkle with toasted pecans. (Makes 1 serving, 75 calories).
