1 - 8 oz pkg cream cheese
1/4 c heavy whipping cream
3/4 c 10x sugar

1 c dry packaged carrot cake mix
1 c shredded carrots
1 c crushed pineapple with juice
1 c coconut
1 t vanilla

Cooking Instructions:

Cream together the first 3 ingredients. Add the remaining ingredients.

Serve with vanilla wafers, graham crackers, etc.

(Cook's note: The taste of carrot cake without the baking!)
