4 small or 2 large cloves of garlic
1 t evoo
1 -14oz jar marinated artichokes, drained well
6 oz cream cheese
1/2 c grated Parmesan
salt & pepper, to taste
Preheat oven to 400 degrees.
Place garlic cloves on a piece of aluminum foil. Drizzle with evoo. Fold up foil to seal. Roast garlic for 30 minutes or until the garlic is soft and browned. Cut off 1 tip of the garlic clove and squeeze out garlic from the peels.
Place artichokes, garlic, cream cheese & Parmesan in food processor and pulse til smooth. Add s&p to taste.
Serve with tortilla chips, scoops, pita chips or crackers.
(Cook's note: This can also be used as a filling for fried wontons!))
