1 -lb crab meat, rinsed & picked
1/2 c mayo
1 c celery, chopped
1 green pepper, chopped
1 medium onion, chopped
1 can cream of mushroom soup
1/2 c cheddar cheese
8 bread slices
3 c milk
1/2 t salt
4 eggs, slightly beaten
Dice half of the bread into the bottom of a large rectangular baking dish.
Mix crab, mayo, celery, green pepper, onion & salt. Spread crab mix over bread.
Trim crusts from the other 4 slices of bread & place over crab mixture.
Mix eggs & milk & pour over bread slices. Refrigerate overnight or for several hours.
Bake 325 degrees for 15 minutes.
Remove from oven and spoon undiluted mushroom soup over the top of the casserole. Sprinkle with cheese.
Bake 1 hour.
