6 oz cucumbers, peeled & cut into twelve - 1/2 inch slices
1 T cilantro, finely chopped
2 T soy sauce (reduced sodium)
2 T rice vinegar
3/4 t sugar
3/8 t white pepper
1 can (6 oz) crab meat, drained & picked over
paprika (optional garnish)
Carefully hollow out a shallow well in each cucumber slice, taking care to leave the bottom intact and not hollow all the way through
the cucumber.
In bowl, combine the next 4 ingredients & mix well. Fold in crab meat.
Mound a T of the crab mixture into each cucumber. Dust with paprika if desired.
