12 hard boiled eggs
1/2 c mayo
2 T finely chopped onion
1 T yellow mustard
1/4 t salt
1/8 t pepper
1 can (7.5oz) crabmeat, drained, flaked & picked (reserve a few pieces to use as garnish)
Old Bay & fresh parsley for Garnish
Cut each egg in half, lengthwise. Remove yolk and mash yolk until smooth.
Combine yolk with mayo, onion, mustard, s&p.
Fold in crabmeat, reserving a few pieces of crab to use as garnish.
Fill egg whites with yolk mixture & Chill.
Garnish each egg half with Old Bay, several pieces of crab & a tiny sprig of parsley.
(Cook's note: First of all, if you make deviled eggs, by all means use your own recipe & just add crabmeat!!! If not, this gives you a starting point! )
