Chicken with Indonesian Peanut Sauce: Submitted by: Matt | Date Added: 29 Apr 2016 Ingredients:

1 ½ tablespoons lime juice
2 tablespoons chunky peanut butter
2 teaspoons low-sodium soy sauce
1 tablespoon Dijon mustard
1 tablespoon honey
1 ½ tablespoons water
¼ teaspoon hot pepper sauce
Pinch ground hot chili peppers

2 whole chicken breasts, skinless and boneless

Sesame oil

Cooking Instructions:

Puree everything except chicken and sesame oil.

Put chicken in plastic bag and pour sauce over it. Marinate in refrigerator for at least a half-hour or as long as 4 hours.

Heat a little sesame oil in wok and add chicken pieces. Stir-fry until cooked through. If you want to use marinade as sauce, heat it thoroughly before serving. Yields 4-6 servings; Each serving is about 190 calories, 7 grams of fat, 60 mg cholesterol and 280 milligrams sodium!
