1 c packed light brown sugar
1/2 c flour
2c chopped pecans
2/3 c butter, softened
2 eggs, beaten
Preheat oven to 350 degrees.
Grease muffin cups. ( Must grease well or muffins will stick!)
In medium bowl, stir brown sugar, flour & pecans.
In separate bowl, beat butter and eggs.
Stir in dry ingredients, just until combined.
Spoon into muffin cups, 2/3 full.
For mini muffins, bake 12-13 minutes.
For regular sized muffins, bake 15-17 minutes.
Run knife around muffins to pop out.
