Mint Green Beans: Submitted by: Vickie | Date Added: 7 Aug 2016 Ingredients:

1/2 - 1 lb green beans
A large handful of fresh mint
1/3 - 1/2 c evoo
Salt & Pepper to taste
2-3 cloves garlic, minced

Cooking Instructions:

Cook green beans in salted water until al dente. Do NOT overcook the beans! You want them to be a little crunchy and crisp. Adding a slash of oil will help retain their color when cooking.

Immediately drain beans and rinse with cold water to completely cool beans to prevent more cooking. Drain well.

Add oil, garlic mint & pepper to food process and blend well.

Place green beans in a large baggie. Add oil mixture and toss well. Fast for s&p and add more if necessary. Marinate in refrigerator several hours, flipping baggie over several times.

(Cook's note: This recipe is a great summertime side dish when fresh green beans are in season. It comes from a dear friend of the family and my daughter's Godmother, Eleanor Benedetto. Unfortunately, she's gone, but her memory forever lives on with my favorite recipes she would make for us. This is a recipe that you just have to do the taste test as you go along and adjust to your own taste buds when it cones to the salt & pepper. Not wet enough? Add more oil. Same goes for the salt & pepper. I usually salt the beans after cooking and draining. Enjoy!)
