1.5 c shredded cheddar cheese
1 jar (4 oz) diced pimentos, finely chopped & drained
1/3 c mayonnaise
Combine all ingredients and refrigerate for at least 1 hour.
(Cook's note: This is a southern thing! I grew up eating it on white bread as a sandwich, or on celery as a snack! It's also good on a bagel for a breakfast to go. I've made it in place of a traditional grilled cheese sandwich and topped also topped it on a burger!)
