2 pkg (16 oz each) pound cake mix
4 eggs
1 c water
1/2 c orange juice
2 T lemon juice
2 t grated lemon peel
2 t grated orange peel
Citrus Glaze:
1 c 10 x sugar
1 T orange or lemon juice
1/2 t vanilla
1. Preheat oven to 350 degrees. Spray 6 mini (5x3 in) loaf pans with nonstick cooking spray. Place on baking sheet.
2. Whisk cake mix, eggs, water, orange juice, lemon juice, lemon peel and orange peel in large bowl 2 minutes or until combined. Pour 1 c batter into each prepared loaf pan.
3. Bake 45 min or until inserted toothpick comes out clean. Cool completely in pans on wire racks.
4. Prepare Citrus Glaze by combining 10x sugar, O.J. and vanilla. If desired, in small bowl. Mix well. Add more juice, if necessary, to reach desired consistency (makes 1/2 c).
5. Drizzle glaze over loaves; Let stand until set.
