2-lb boneless skinless chicken breasts
1 c mild salsa
1t Taco seasoning
Place chicken in Pam sprayed crock pot; Season with Taco seasoning.
Spoon salsa over top of chicken and spread to cover chicken.
Cook on low, 3-4 hours, or high 2 hours.
Remove chicken; Cool slightly and shred with 2 forks.
Place chicken in bowl and spoon 1/4 c juices over chicken to keep moist. Add more juice if needed.
Serve with: Hard or soft taco shells, shredded lettuce, cheese, tomatoes, beans, avocado, guacamole, etc. Or, serve as a bowl with rice and any of the suggested toppings.
You can also use ground beef or thinly sliced beef instead of chicken.
