Red, Yellow and/or orange sweet peppers (about 6)
Garlic powder
Black pepper
4-6 boneless, skinless chicken breasts
Evoo
1 pkg Taco seasoning (3T)
For serving: Flour tortillas and all the toppings you like such as shredded cheese, lettuce, spinach, black beans, sour cream, salsa, hot sauce, etc.
Line crock pot with liner. Spray with Pam.
Place pepper and onion in crock pot; Sprinkle wth garlic powder & pepper.
Top with chicken breasts; Drizzle breasts with oil. Sprinkle with taco seasoning.
Cook low & slow about 7 hours,
Remove chicken & shred; Add peppers & onions and some of the liquid to keep moist.
Serve with tortillas and fixings, or enjoy like I prefer in a bowl with favorite toppings!
