Guaca-Mollie (AKA Mollie’s Guacamole)
5-6 ripe avacados
½ red onion, chopped
2 Tbsp. Cilantro
1-2 roma tomatoes, pulp removed and chopped
¼ tsp. sea salt (or to taste)
1 tsp fresh minced garlic
Juice of 2 limes
1. Remove avocado pits. Mash 3-4 avocados, and coarsest chop the remaining 1-2.
2. Mix mashed avocado with other ingredients, adding chopped avocado last to avoid mashing it. Serve with tortilla chips.
