Black-Eyed Pea Relish / Salsa: Submitted by: Vickie | Date Added: 16 Jan 2017 Ingredients:

3 T evoo
2 T red wine vinegar
1 T chopped jalapeƱo
1/4 t Kosher salt
1/4 t black pepper
1 c quartered cherry tomatoes
1/4 c chopped red onion
1/4 c chopped flat leaf parsley
1 oz (1/4 c) chopped, pitted Castelvetrano olives

1 can black-eyed peas, rinsed and drained

Cooking Instructions:

1. Combine 1st 9 ingredients in a large, sealable baggie.
2. Add peas and marinate at least 10 minutes.
3. Use as a condiment (good on fish!)
