Cheesy Crab Poppers: Submitted by: Vickie | Date Added: 17 Jan 2017 Ingredients:

1 box Jiffy mix
1 c Panko
1 c shredded cheddar
4 oz cream cheese, softened
1 egg
1 stick butter
1/4 c milk
2 scallions, chopped
1/4 t salt
1/4 t cayenne
1-10 oz crabmeat, picked

Cooking Instructions:

1. Mix all ingredients except crabmeat.
2. Gently fold in crab.
3. Using a cookie scoop to shape, scoop into balls and place on cookie sheet till ready to fry.
4. Deep fry balls in frying pan, about 5 min each.

(Cook's note: I add Old Bay seasoning instead of salt. Makes about 30 balls.)
