For the salad:
2 large bunches of watercress, stems removed.
1 small sweet onion, sliced
1 can mandarin oranges, drained (or 2 oranges, peeled & sectioned)
For the dressing:
2 T honey
2 T evoo
2 T vinegar
1. Combine dressing ingredients and mix well.
2. Toss dressing with remaining ingredients.
