1/4 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons freshly squeezed Meyer lemon juice
Zest of 1 Meyer lemon
1 tablespoon sugar
1. Mix all ingredients in a mason jar and use on your favorite salad mixings.
(Cook's note: This is especially good as a dressing for kale salads. Try it with: 4 c chopped kale, 1 diced avocado, 1/2 c cooked quinoa, 1/2 c pomegranate arils, 1/2 c chopped pecans & and 1/4 c crumbled goat cheese.)
