1-lb ground beef or ground turkey
1/4 medium onion, diced
1/2 red, orange or yellow sweet pepper
3 T taco seasoning
1 c diced tomato’s
12 oz cauliflower rice, fresh or frozen (I use cauliflower crumbles)
1/2 c chicken broth
1.5 c shredded Cheddar or Mexican blend cheese
1. Brown meat on medium heat until almost done, leaving a little pink; Drain
2. Add onion & Peppers. Add taco seasoning. Cook until meat in no longer pink.
3. Stir in cauliflower & tomato; stir in chicken broth and cook 8-10 minutes.
4. Sprinkle cheese on top. Cover with lid and cook 3-4 more minutes to melt cheese.
5. Top with any of your Mexican favorites such as sour cream, avocado, cilantro and green onion.
(Cook’s note - This is low cal, low carb, 195 calories, has only 5 net carbs and will serve 6. This is a keeper recipe!)
