4 slices bacon, cut into 1/2 in pieces
1 c chopped onion
1 c chopped green pepper
1 c chopped celery
2 t sugar
1 can stewed tomatoes
1 can backeyed peas, drained and rinsed
1 Bay leaf
1. Sauté bacon until crusp; set aside, leaving grease in pan.
2. Sauté onions, peppers and celery in bacon grease until tender.
3. Stir in remaining ingredients and cook over low, 10-15 min, stirring occasionally.
4. Remove bay leaf and serve.
(Cook’s note: This can be made into a casserole by combining everything and bake at 350 for 30-35 minutes.)
