1-lb ground beef (or turkey)
2 large or 1/2 bag baby carrots, chopped
1 large onion, chopped
2 stalks celery, chopped
3 zucchini, diced
1 t salt
1 t pepper
1-2 t chili powder
2-3 shakes crushed red pepper
smoked andouille sausage (polish sausage or kielbasa), diced
3 cans stewed tomatoes, drained (I use 1 can, undrained)
1 large box of beef broth
1 small or medium head of cabbage, chopped
1. Saute onion, carrots, celery and zucchini in evoo.
2. Add ground beef, cooking on medium heat.
3. While meat is cooking, add salt, pepper, chili powder, red pepper, garlic and onion powder; drain if necessary.
4. Add diced sausage; stir & continue to saute.
4. Add stewed tomatoes and beef broth; stir and simmer 10 minutes.
5. Adjust salt and garlic powder seasoning to taste.
6. Add chopped cabbage & turn off heat.
7. Let sit at least 3 hours before eating! Even better the next day.
(Cook's Note: This soup/goulash is amazing! My daughter, Mollie, made it as a revised combination of cabbage soup and used zucchini instead of noodles in traditional goulash dishes! Dale ate 2 bowls and said this was the best soup/stew I have ever made...I have to agree!)
