1 pound ground beef
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons unsalted butter
1 small onion diced
1 green bell pepper diced
1/4 teaspoon garlic powder or 2 cloves of garlic, minced
1 tablespoon worcestershire sauce
1/2 cup beef broth
1 tablespoon cornstarch
4 slices white american or provolone cheese
4 rolls
1. Heat a saute pan over medium heat. Crumble ground beef and season with salt and pepper, then cook until browned, about 5 minutes. Remove from pan and set aside.
2. Add butter to pan. Once melted, add onion and bell pepper and saute until vegetables brown and onions begin to turn translucent, about 4-5 minutes.
3. Reduce heat to low, then return ground beef to pan. Add garlic powder, worcestershire sauce, and beef broth, scraping the bottom of the pan as you incorporate your ingredients.
4. Add cornstarch and stir until dissolved. This will thicken the beef broth and create a sauce. If beef looks dry, add 1-2 tablespoons of water.
Remove from heat.
5. Top meat mixture with cheese slices and allow to set for 1-2 minutes, or until melted. Remove from heat, spoon onto rolls and serve immediately.
(Cook’s note: Dale forwarded this recipe to me and it’s a keeper! When I made it, I didn’t have the recipe in front of me so I have some modifications. I only used enough ground beef to make 2, so about 1/3 lb. I don’t particularly like green pepper, so I used red, orange and yellow mini peppers, and used 1 of each. I have been on a mushroom kick, so threw in a handful of fresh mushrooms. I used fresh garlic. I didn’t remember to use beef broth, so didn’t use cornstarch either. If you’re doing Keto, substitute to almond flour. It wasn’t dry without the broth. I cheated by starting to brown beef, then add remaining ingredients and continue to cook. I didn’t have provolone so I cut 2 rounds of fresh mozzarella and threw it in the side of the pan to start to melt it. I put melted Velveeta on top of the meat mixture in the pan
Slapping some butter on the buns and then pan frying them is a must! I layered the mozzarella on the bottom of the bun, then added the meat mixture with Velveeta on top. I don’t think you can mess this recipe up and I don’t think I will ever eat a regular Sloppy Joe again!)
