1 Rotisserie chicken, shredded
1/4-1/2 Vidalia onion, finely chopped
3 stalks celery, finely chopped
2 T curry powder (to taste)(Madras, if possible)
1 c mayonnaise (I prefer Duke’s)
1 can crushed pineapple (or 2-3 T chutney or apricot
preserves
Craisins
Slivered almonds
Seedless red grapes
kosher salt, pepper and celery salty taste
1. Combine all ingredients.
2. Adjust seasoning & mayo taste.
