1/2 lb Bacon, Bacon grease, butter
1 medium sweet onion, chopped
2-3 stalks celery, chopped
1/2 head cabbage, chopped
2-3 cloves garlic
2-3T Worcestershire sauce
1 can petite tomatoes, with juice
2 cans corn, drained)
2-3 cans Campbell’s Hearty Country Beef Vegetable Soup
1-2 boxes of beef broth
2 c water
1 large bag of frozen peas, corn and carrots (I use drained canned cut green beans, Lima or butter beans, diced potatoes )
Seasonings: Old Bay, JO, celery salt, salt, pepper, garlic powder, and red pepper flakes to taste
(Cook’s note: This is an award winning recipe my mother and I found in a magazine 40+ years ago! I have adjusted to recipe throughout the years to perfect it to our traditional crab soup that we would cook all day! I will match this quick version to any traditional Maryland crab soup! When someone wants the recipe (and they will!) I just tell them it’s an old family recipe! Shhhhh....I won’t tell if you won’t!’
P.S. I just made this for Dale. He absolutely loved it and asked why I never made it for him in the past 20 years. Even Mollie said I haven’t made it since she was little! Damn...time flies!!!!)
1. In large pot, cook bacon for grease. Remove bacon & sauté onion & celery in bacon grease and oil until translucent.
2. Add garlic and cabbage and continue to cook.
3. Add butter and a little beef broth if liquid is needed and continue to cook so garlic doesn’t burn.
4. Add Worcestershire sauce, tomatoes and soups and continue to cook.
5. Add add veggies and corn.
6. Add beef broth & water to desired liquid amount.
7. Add Old Bay and seasonings to taste.
8. Continue to simmer for 30 minutes. The longer, the better
8. Adjust seasonings. Turn off heat.
9. Gently stir in crab meat.
10. Adjust seasonings and liquid if needed
