Crock Pot Egg Brunch: Submitted by: Vickie | Date Added: 16 Apr 2015 Ingredients:

6-8 strips of bacon, cooked, cooled & chopped
1 onion, chopped
1 clove of garlic, minced
1 red or green pepper, chopped
1 - 2lb bag of frozen hash brown potatoes (Do not thaw!)
1.5 c shredded cheese
12 eggs
1 c milk
1 t dill
1/2 t salt
1/2 t pepper

Cooking Instructions:

Spray crockpot with Pam. Saute onion, garlic & peppers for about 5 minutes. (You can use some of the bacon grease!)

Place 1/3 of the frozen hash browns in crockpot. Add 1/3 bacon, 1/2 onion mix & 1/2 cheese.

Repeat layers 2 times, ending with cheese.

In bowl, mix eggs, milk, dill, salt & pepper and it pour into the crockpot.

Cover & cook on low, 8-10 hours.

(Cook's Note: This is a great recipe to cook overnight for the weekend, holidays or special occasions. I have also used precooked bacon that I buy in bulk at Sam's, BJ's or Costco, egg substitute and low fat milk!)
