2 c flour
2 t baking soda
2 eggs
1.5 c sugar
1 t salt
14 oz can of fruit cocktail, with juice
1/4 cup nuts, chopped ( I use pecans)
1/4 c brown sugar
Glaze:
3/4 c sugar
1/2 c evaporated milk
1/2 c margarine or butter
1 t vanilla
Mix the 1st 6 ingredients by hand and pour into a greased 9x13 pan.
Mix sugar & nuts and sprinkle over batter.
Bake at 375 degrees for 35-45 minutes. Spread glaze over hot cake.
Glaze instructions:
Boil glaze ingredients for 5 minutes and pour over hot cake.
(Cook's Note: This cake is great! It's also one of my go-to's for potluck if I have to take a dessert. It goes home empty and the recipe is always requested.)
