Sift:
2 c self rising flour
2 c sugar
1 t cinnamon
1 t cloves
1/4 nutmeg
Make a well in the flour mixture and add:
1 c oil
3 eggs
2 jars of strained baby plums (4 3/4 oz; baby food section!)
Mix, add 1 c chopped pecans & bake.
Follow above directions and bake in a greased, floured bundt pan for 1 hour at 250 degrees.
Let sit 5 minutes and turn out cake onto cake dish.
Mix GLAZE & drizzle over warm cake:
1 c 10x sugar
juice of 1 large lemon
(Cook's Note: This cake is excellent & tastes like a spice cake! Sometimes it's hard to find the baby plums in the baby food section so substitute it with baby food prunes! The lemon glaze gives it just the right amount of a sweet/sour taste. It is the first "real" cake (meaning not something out of a box!) I learned to make in the 70's!)
