For the Meatballs:
1 - lb lean ground beef
2 slices broken white bread (about 2 cups)
1 pkg dry onion soup mix
1 egg, slightly beaten
1 T dried parsley flakes
For the Sauce:
1 c catsup
1/3 c lemon juice
1/3 c grape jelly
Combine meatball ingredients & shape into bite size balls. (Use a cookie scoop for uniform sized balls!) Arrange meatballs in a Pam sprayed casserole dish.
Mix sauce ingredients & pour over meatballs.
Bake at 350 degrees for 45 minutes. Spoon off excess fat.
(Cook's note: Everyone has their favorite meatball recipe, but this is still my favorite! If you're in a pinch, you can substitute frozen meatballs (Homestyle!). This is another one of my favorite 70's recipes that you can freeze and cook later, which is always good to have around the holidays or special occasions!)
