(Cook's Note: I love Thai food! It is probably my most favorite food in the world. My dear friend, Tuk, who is a cook at a local Thai restaurant, taught me how to do some easy Thai food favorites! I also make this with sliced chicken breast. To make it with chicken, I will cook it as if I'm making chicken soup: Chop celery, onion & carrots. Add water and chicken broth. Add salt, pepper & celery salt. Bring to boil. Add chicken breasts. Bring back to boil. Reduce & simmer for 20 minutes. Remove chicken. Cool then slice to use in Thai salad instead of beef. Use chicken stock to make chicken and dumplings, chicken & rice soup or even Miracle soup!)
