Polish Reuben Casserole: Submitted by: Vickie | Date Added: 26 Mar 2015
Listed in: Casseroles
Ingredients

1 can cream of mushroom soup
1 can cream of celery soup
1.5 c milk
1/2 c chopped onion
1 T mustard
dash of pepper, onion & garlic powder
1 t sherry
2 cans (16 oz) or 1 bags sauerkraut, rinsed & drained well
1 package (8 oz) wide or egg noodles (uncooked!)
2 - lbs polish (cooked) sausage, sliced
2 c swiss cheese, shredded

3/4 c bread crumbs (rye if possible)
2 T melted butter

Cooking Instructions

Preheat oven to 350 degrees.

In a greased 13x9 casserole dish, spread sauerkraut in bottom of dish & top with uncooked noodles.

Mix the first 7 ingredients together. Add 1/2 of the sausage. Pour over noodles.

Top with remaining sausage, then cheese.

Combine bread crumbs with butter & sprinkle over topping.

Bake, covered at 350 degrees.

(Note: I make two casseroles, one to keep and one for pot luck. Just divide the ingredients in two shallow casserole dishes and double the topping!)

This has been my #1 most requested pot luck dish! What makes it really easy is that it's made with uncooked egg noodles! Left by: Vickie (16 Apr 2015)
