1 3/4 c. flour
1.5 t. baking powder
1 t. salt
2 t. pumpkin pie spice
1/4 c. melted butter
1/2 c. brown sugar, packed
1 egg
1 t. vanilla extract
3/4 c. pumpkin puree
1/2 c. milk
Coating:
1/3 c. sugar
2 heaping T cinnamon
1/4 c. butter, melted
Preheat oven to 350 degrees.
Spray a mini muffin tin, donut pan or cake pop baking pan with Pam.
Combine flour, baking powder, salt and pumpkin pie spice in large bowl.
In separate bowl, combine pumpkin, butter, brown sugar, egg & milk. Pour wet ingredients into dry ingredients. Mix, but don't over mix!
Fill tin 1/2 full.
Bake 12-15 minutes, until toothpick comes out clean; Cool slightly.
While muffins are baking, prepare coating. Melt butter & put onto dish. Combine sugar and cinnamon and pour onto separate plate.
Roll slightly cooled muffins in melted butter and then toss well with cinnamon mixture.
Note: Just roll muffin in butter instead of dropping it....it doesn't have to be coated evenly or soaked in the butter!
