1.5 c chopped, peeled mango
1 c thinly sliced green onion
1/2 c cooked brown or wild rice
3 T chopped cilantro
2 T fresh salsa
2 T lime juice
2 T evoo
1/2 t salt
1/4 t black pepper
1 (15 oz) can of black beans, drained
fresh cilantro for ganish
Toss all ingredients to combine. Garnish with cilantro.
(Cook's note: Serve over a Romaine leaf or bed of lettuce, if desired. This is also good with 1/2 c of steamed or sauteed shrimp added!)
