Mango Salsa Recipe 1:
1/4 c chopped mango
3 T chopped shallots
1.5 T lime juice
1 avocodo, peeled & chopped
1 garlic clove, minced
1-2 T chopped cilantro
Mango recipe #2:
1 1/4 c avocado, peeled and chopped
1 c. mango, peeled & chopped
1-2 T chopped clantro
Mango Salsa Recipe #1 - Combine all ingredients and let stand for 10-15 minutes.
Mango Salsa Recipe #2 - Combine all ingredients and let stand for 10-15 minutes.
(Cook's note: You can also add freshly cooked corn, drained petite tomatoes and drained cannellini or black beans to either recipe. If I'm using it as a side, I occasionally add corn, tomatoes and/or beans. If I'm using it as a topping for turkey or salmon burgers, I prefer it without the optional additions.)
