1- lb frozen baby lima beans (or Fava Beans)
3 T sesame seeds, toasted
1/4 c. fresh lemon juice
1 T evoo
3/4 t salt
Cook beans in boiling water for 10 minutes or until very tender. Drain, reserving 1/2 c liquid.
Place sesame seeds in a blender & process until fine. Add juice and next 3 ingredients; process until blended. Add beans and 1/2 c of reserved liquid; process until smooth, scraping sides occasionally.
(Cook's note: Yields 8 servings, 1/4 c each and 95 calories each serving. Serve with raw veggies or toasted pita triangles.)
