1 - lb dried navy beans, soaked overnight and drained (I usually soak mine in chicken broth)
1 - lg smoked ham hock
10 c water
2 onions, chopped
3 potatoes, peeled & cubed
6 ribs celery, chopped
1/3 c flat leaf parsley (divided)
salt & 1/2 t pepper to taste
Put beans, ham hack & water to cover beans in crock pot. Cook on high 1 hour. Drain. Add 10 c water, onion, potatoes, celery, & 1/2 of the parsley. Cover and cook on low 8-10 hours. Stir in remaining parsley, pepper & season to taste with salt. Cover and cook on low for 15 more minutes. Remove ham hock & pull meat off the bone. Add meat to soup. You can also add chopped/shredded leftover ham when cooking.
