1 head of steamed cauliflower, cut into bite size pieces (raw or blanched)
6 hard boiled eggs, peeled & separated
1/3 c mayo (don't use light!)
3 T mustard
3 T pickle relish
1/8 c chopped sweet onion
salt & pepper to taste
1.Mash egg yolks; cut whites into bite size pieces and mix egg together.
2.Add remaining ingredients and combine. Refrigerate overnight. Garnish with additional sliced hard-boiled egg and fresh parsley, if desired.
(Cook's note: 1 c = 3 carbs, vs. 37 carbs for potatoes!)
