Ingredients

1 large head of cabbage, shredded
2 c water
4-lbs potatoes, quartered

2 c milk
1 c green onions, chopped
s&p to taste1/4 c butter
Fried bacon, crumbled

Cooking Instructions

Bring water & cabbage to boil; Reduce heat, cover & simmer 10-12 minutes. Drain, but reserve liquid.

Place liquid in a large pot . Add potatoes and additional water to cover potatoes. Bring to boil; Reduce heat & and cook potatoes 15-17 minutes. Beat potatoes. Beat in milk and cabbage. Add s&p. Add butter. Serve with chopped bacon & green onions.

(Cook's note: Leftover Colcannon makes great potato pancakes! Just add flour to thicken & hold shape, dust with additional flour to prevent sticking and fry in a pan with oil & butter!)
