Beef with Rice
1 lb. ground beef
2 Tbsp butter
¼ cup onion (finely chopped)
¼ cup green pepper (finely chopped)
1 tsp salt (divided)
¼ cup unsulphured molasses
2 Tbsp prepared mustard
1 can (1 lb.) chopped tomatoes
1 cup raw rice
Melt butter. Add onion and green pepper and cook until onion is tender, but not yet brown.
Add ground beef and ½ tsp salt. Brown beef.
While browning, combine molasses and mustard. Add to beef mixture with tomatoes and rest of salt.
Gradually add rice. Add a little water if needed, then cover, reduce heat and simmer 25-30 minutes.
(Cook's note: You can substitute whatever you like for the onions & green peppers, such as shallots and peppers of your choice. The last time I made it, I used shallots and cayenne peppers. The main part of this dish is the molasses/yellow mustard combination. It gives a very unique flavor & reheats well! As a finishing variation, mix in a bit of garlic powder & top with shredded cheese. Let the cheese melt a little before serving. Enjoy!)
