For the salad:
6 ears of fresh corn, cooked and cut off the cobb ( I've also used frozen corn in off season)
1 C fresh blueberries
1/2 English cucumber, sliced
1/4 c. sweet onion, chopped
1/4 c. fresh cilantro
1 jalapeno, seeded & chopped
For the dressing:
2 T lime juice
2 T evoo
1 T honey
1/2 t. ground cumin
1/2 t salt1/4 t pepper
Mix dressing ingredients and pour over salad ingredients. Store in a baggie and keep refrigerated until ready to serve.
