1 large onion, chopped
1 head cauliflower, core removed & separated in flowerets
1/2 c matzo meal
3 T dill, chopped
3T flat leaf parsley
3T evoo
1/2 t each, salt & pepper
1 T honey
4 large eggs, beaten
Preheat oven to 450 degrees.
I large bowl, mix matzo meal, dill & parsley. Set aside.
On large baking sheet, toss onion & cauliflower with evil, salt & pepper. Bake for 25 minutes.
Remove baking sheet and drizzle with honey. Bake an additional 5-10 minutes. Remove veggies &lower heat to 375 degrees.
Pulse veggies in food processors until finely chopped.
Add veggie mix & beaten eggs to matzo meal. Mix well.
Pour into greased 9x9 in baking dish and bake until set, about 35 minutes. Cut into 8 squares & serve.
