1 - lb new red potatoes, halved
1 T evoo
1 small onion, thinly sliced
1/2 head cabbage, thinly sliced
S & P to taste
3 T salted butter, divided
Place potatoes & enough water to cover in medium saucepan. Bring to boil and cook til tender, about 20 minutes. Drain.
Heat oil in large saucepan over medium heat. Add onion; cook & stir about 8 minutes.
Add cabbage; cook about 5 minutes.
Add potatoes to skillet; cook until heated through.
Slightly mash potatoes. Season with salt & pepper to taste.
Add 1/2 T of butter to each portion just before serving.
