1 boxed yellow cake mix (do not follow box directions!)
3-4 very ripe banana, mashed (I use 4)
1 c blueberries
2 eggs
2 t vanilla extract
Preheat oven to 350 degrees.
Toss blueberries in a separate bowl with a little of the cake mix added.
Mix eggs, vanilla, cake batter and bananas with mixer.
Stir in blueberries by hand.
Pour batter into a prepared Bundt pan that has been sprayed with Pam and coated with a little flour.
Bake 40-45 minutes or until a toothpick inserted comes out clean.
Turn cake over onto cooling rack.
(Cook's note: I put this recipe together as a quick dessert to get rid of the way over ripe bananas drawing fruit flies! It's similar to some of the weight watcher's recipes, but I couldn't find one with bananas AND blueberries so I adlibbed! Serve with butter for breakfast or dessert. I also would like it with a lemon glaze of 10x sugar mixed with 2-3 T lemon juice! Very moist and quick to whip up! My favorite style is using Bundt pans but just follow cooking directions on box if you want to make it in loaf pans or muffin tins.)
