1/2 lb cooked shrimp, tails removed
1 T butter
1 t Old Bay
salt & pepper to taste
1 large loaf of ciabatta bread, sliced in half (ok to use baguettes, but they may get a little crispier than when using ciabatta)
1/2 c mayo
1/4 c fresh dill, chopped
1/4 c fresh chives, chopped
2 cloves garlic, minced
1 c shredded cheddar jack cheese
1. In large saucepan, melt butter over medium heat. Add shrimp & old bay. Cook only for a minute or two until shrimp are well coated. Remove from heat and cool.
2. Preheat oven to 350 degrees.
3. Place shrimp in a medium bowl and mix with all remaining ingredients.
4. Season with salt and pepper to taste.
5. Spread onto cut ciabatta bread. Line a baking sheet with parchment paper and bake for 10-13 minutes until completely warmed through. Since ovens may vary, check after 10 minutes.
6. Slice into sticks and serve warm.
(Cook's note: I've recently been on a naan bread kick, especially to make pizza. The next time I make this, I'm going to use naan and adjust the cooking time accordingly! I may also give it a try with some crab meat!)
